  • 2 boneless, skinless chicken breasts (or thighs), thinly sliced
  • 2 packs of instant ramen noodles (discard seasoning packets)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)
  • 2 teaspoons sesame seeds (optional, for garnish)
  • Fresh cilantro or green onions for garnish

Instructions:

  1. Cook the ramen noodles:

    • Cook the ramen noodles according to the package instructions, then drain and set aside. Discard the seasoning packet, as we’ll be using a homemade sauce.

  2. Prepare the stir-fry sauce:

    • In a small bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, and crushed red pepper flakes (if using). Set aside.

  3. Cook the chicken:

    • Heat 1 tablespoon of sesame oil and 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
    • Add the sliced chicken to the skillet and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set it aside.

  4. Stir-fry the vegetables:

    • In the same skillet, add the onions, bell peppers, carrots, and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

  5. Add garlic and ginger:

    • Add the minced garlic and ginger to the vegetables and stir-fry for another 1-2 minutes until fragrant.

  6. Combine chicken and ramen:

    • Add the cooked chicken back to the skillet along with the cooked ramen noodles. Pour the stir-fry sauce over everything and toss to coat. Continue to cook for 2-3 minutes until everything is heated through and the noodles have absorbed the sauce.

  7. Serve and garnish:

    • Serve the Chicken Ramen Stir Fry hot, garnished with sesame seeds and fresh cilantro or green onions for an extra burst of flavor.
