Ingredients:

    • 1 lb large shrimp, peeled and deveined

    • 2 sausages (your choice of variety), sliced into rounds

    • 1 bell pepper, sliced

    • 1 zucchini, sliced

    • 1/2 red onion, thinly sliced

    • 4 cloves garlic, minced

    • 2 tablespoons honey

    • 2 tablespoons soy sauce

    • 1 tablespoon olive oil

    • Juice of 1 lemon

    • Fresh parsley for garnish

    • Salt and pepper to taste

Instructions:

    1. Prepare the sauce:
        • In a small bowl, whisk together the honey, soy sauce, and lemon juice. Set aside.

    1. Cook the sausage:
        • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage slices and cook for 57 minutes, or until they are browned and cooked through. Remove the sausage from the skillet and set it aside.

    1. Sauté the vegetables:
        • In the same skillet, add the sliced bell pepper, zucchini, and red onion. Sauté for 3-4 minutes until the vegetables are tender but still crisp. Add the minced garlic and cook for another minute until fragrant.

    1. Cook the shrimp:
        • Push the vegetables to one side of the skillet and add the shrimp to the empty side. Cook the shrimp for 2-3 minutes per side, or until they turn pink and opaque. Season with salt and pepper to taste.

    1. Combine and coat:
        • Return the cooked sausage to the skillet. Pour the honey garlic sauce over the shrimp, sausage, and vegetables, and toss everything together to coat evenly. Let it cook for another 2-3 minutes, allowing the sauce to thicken slightly.

    1. Garnish and serve:
        • Garnish with fresh parsley and serve hot. You can serve this dish on its own or with rice, quinoa, or a side of crusty bread to soak up the delicious sauce.
