One-Pan Chicken and Sweet Potato Skillet: A Healthy, Flavorful Weeknight Dinner

Step 1: Prepare the Ingredients

  1. Cube the sweet potatoes into bite-sized pieces for even cooking.
  2. Season the chicken with salt, pepper, and half of the seasoning blend.

Step 2: Sear the Chicken

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken and sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside (it will finish cooking later).

Step 3: Cook the Sweet Potatoes

  1. Add the remaining olive oil to the skillet, followed by the sweet potatoes.
  2. Sprinkle the rest of the seasoning blend over the sweet potatoes and stir to coat evenly.
  3. Cook for 810 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized.

Step 4: Add the Vegetables

  1. Reduce the heat to medium. Add the onions and bell peppers to the skillet with the sweet potatoes. Cook for 3-4 minutes until softened.
  2. Stir in the chicken broth, scraping up any brown bits from the bottom of the skillet for extra flavor.

Step 5: Combine and Finish Cooking

  1. Return the chicken to the skillet, nestling it among the sweet potatoes and vegetables.
  2. Cover and cook for 6-8 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  3. If using spinach, stir it in during the last 2 minutes of cooking to wilt.

Step 6: Serve and Enjoy

Garnish with fresh parsley and serve your One-Pan Chicken and Sweet Potato Skillet hot. Pair with a simple side salad or enjoy it as a standalone meal.
