Step 1: Prepare the Ingredients
- Cube the sweet potatoes into bite-sized pieces for even cooking.
- Season the chicken with salt, pepper, and half of the seasoning blend.
Step 2: Sear the Chicken
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken and sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside (it will finish cooking later).
Step 3: Cook the Sweet Potatoes
- Add the remaining olive oil to the skillet, followed by the sweet potatoes.
- Sprinkle the rest of the seasoning blend over the sweet potatoes and stir to coat evenly.
- Cook for 8–10 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized.
Step 4: Add the Vegetables
- Reduce the heat to medium. Add the onions and bell peppers to the skillet with the sweet potatoes. Cook for 3-4 minutes until softened.
- Stir in the chicken broth, scraping up any brown bits from the bottom of the skillet for extra flavor.
Step 5: Combine and Finish Cooking
- Return the chicken to the skillet, nestling it among the sweet potatoes and vegetables.
- Cover and cook for 6-8 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- If using spinach, stir it in during the last 2 minutes of cooking to wilt.
Step 6: Serve and Enjoy
Garnish with fresh parsley and serve your One-Pan Chicken and Sweet Potato Skillet hot. Pair with a simple side salad or enjoy it as a standalone meal.
