Main Ingredients:

  • Ground Beef: 1 lb (you can substitute with ground turkey or chicken)
  • Frozen Corn: 1 1/2 cups (or canned corn, drained)
  • Kidney Beans: 1 can (15 oz), drained and rinsed
  • Black Beans: 1 can (15 oz), drained and rinsed
  • Tater Tots: 1 bag (about 28 oz)
  • Shredded Cheese: 1 1/2 cups (cheddar works best)

Seasonings:

  • 1 packet of taco seasoning or homemade seasoning (1 tbsp chili powder, 1 tsp cumin, 1 tsp garlic powder, 1/2 tsp onion powder)
  • Salt and pepper to taste

Optional Add-ins:

  • 1 cup diced bell peppers (red, green, or both)
  • 1 small onion, diced
  • 1 cup diced tomatoes (fresh or canned)
  • 12 jalapeños, chopped (for some heat)

Instructions

Step 1: Brown the Ground Beef

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Stir in taco seasoning (or your homemade seasoning blend) and a pinch of salt and pepper. Set aside.

Step 2: Assemble the Casserole

  1. In your slow cooker, add the browned beef, frozen corn, kidney beans, black beans, and any optional add-ins like bell peppers or diced onion.
  2. Stir everything together to evenly distribute the ingredients.

Step 3: Add the Tater Tots

  1. Layer the tater tots evenly over the top of the casserole mixture. Don’t worry about them being perfect—just spread them out as best as you can.

Step 4: Slow Cook

  1. Cover the slow cooker and cook on high for 3-4 hours or low for 6-7 hours. The tater tots should be golden brown and crispy on top, while the ingredients underneath will be hot and bubbly.

Step 5: Add Cheese and Serve

  1. About 15 minutes before serving, sprinkle the shredded cheese evenly over the tater tots. Cover and let the cheese melt.
  2. Once the cheese is melted and bubbly, your casserole is ready to serve!
