			Main Ingredients:
- Ground Beef: 1 lb (you can substitute with ground turkey or chicken)
- Frozen Corn: 1 1/2 cups (or canned corn, drained)
- Kidney Beans: 1 can (15 oz), drained and rinsed
- Black Beans: 1 can (15 oz), drained and rinsed
- Tater Tots: 1 bag (about 28 oz)
- Shredded Cheese: 1 1/2 cups (cheddar works best)
Seasonings:
- 1 packet of taco seasoning or homemade seasoning (1 tbsp chili powder, 1 tsp cumin, 1 tsp garlic powder, 1/2 tsp onion powder)
- Salt and pepper to taste
Optional Add-ins:
- 1 cup diced bell peppers (red, green, or both)
- 1 small onion, diced
- 1 cup diced tomatoes (fresh or canned)
- 1–2 jalapeños, chopped (for some heat)
Instructions
Step 1: Brown the Ground Beef
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Stir in taco seasoning (or your homemade seasoning blend) and a pinch of salt and pepper. Set aside.
Step 2: Assemble the Casserole
- In your slow cooker, add the browned beef, frozen corn, kidney beans, black beans, and any optional add-ins like bell peppers or diced onion.
- Stir everything together to evenly distribute the ingredients.
Step 3: Add the Tater Tots
- Layer the tater tots evenly over the top of the casserole mixture. Don’t worry about them being perfect—just spread them out as best as you can.
Step 4: Slow Cook
- Cover the slow cooker and cook on high for 3-4 hours or low for 6-7 hours. The tater tots should be golden brown and crispy on top, while the ingredients underneath will be hot and bubbly.
Step 5: Add Cheese and Serve
- About 15 minutes before serving, sprinkle the shredded cheese evenly over the tater tots. Cover and let the cheese melt.
- Once the cheese is melted and bubbly, your casserole is ready to serve!
